This Month's Motto: feel good recipes
Ms Jean - The Canadian Cats (Shoko and Kali)'s Mom, is not well, so the Weims, Da Phenny and Nellie are hosting by themselves.
We Made Creamed Chicken on Toast
This is a really quick and easy comfort food dinner. Mom usually makes it with leftover rotisserie chicken and turkey (at Christmas and Thanksgiving). It is a basic cream sauce with Chicken added. Mom likes it with peas, us cats (and Cinnamon) like without.
Make enough cream sauce for the amount of chicken or turkey you have. A rotisserie chicken works great. The recipe below is for a medium cream sauce, like thick cream. Add more flour if you want it thicker.
For each cup of sauce…
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup milk
Melt butter in saucepan over low heat, if you have time and like onions, you can fry some diced onions in the butter. When bubbly (and if you added onions, cook until they are translucent). Then blend in flour, salt and pepper.
Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat, stir in milk. Then return to heat and heat to boiling, stirring constantly.
If you want peas, add a quarter cup of frozen peas to a little bit of
water and zap for 1 minute (or until steaming. Boil for 1 minute.
Turn off heat, add the drained peas and the chicken, stir, cover and let the boiling sauce heat the chicken.
Spoon over toast and (if desired) sprinkle with paprika, lemon pepper or salt and pepper.
Here is a Picture!
that looks like a belly charmer... and creamy means it is like a balm for the tummy, right?
ReplyDeleteThat looks so yummy! I'm picking up my fork and going in☺
ReplyDeleteThat is what my Mom calls "comfort food" and something she has made when she's not in the mood to make a great big huge meal. YUM and thanks for reminding us that comfort food is COMFORT FOR THE TUM!!
ReplyDeleteHugs, Teddy
Mmm, Mmm Good!
ReplyDeleteI can't believe Katie and Kozmo traveled so far in such a short time. Hopefully they both got home they did not have jet lag. What a yummy recipe. It's nice to actually look at a travel blog, so thanks kitties for the trip.
ReplyDeleteWe love tunnel travel! It as as fast as your imagination can carry you! Other than the minor bit of dizziness when we go too fast, Midway to Menai Bridge (Wales) only takes about 30 seconds longer than from Midway to Katie's.
DeleteLynn and Precious, Marv did make it a Travel Blog, didn't he? Kozmo and Austin are brothers from another Mother and both squire Katie around. We were all munching chips and tossing back the brewskis!
ReplyDeleteMom said she saw that recipe and the peas in there totally made her want to make the creamed chicken on toast, She will.

My mom loves creamed chicken but she puts it on buttermilk biscuits and uses peas and carrots. Both sound delightful.
ReplyDeleteI want to be with the kitties with my own drink. We can talk about whatever we want.
ReplyDeleteI love that recipe. We used to eat SOS all the time. I loved it too. This dish is similar.
Thank you for joining the Wordless Wednesday Blog Hop.
Have a fabulous Wordless Wednesday. Scritches all around, a smooch to Marv and a big hug to mom. ♥

ReplyDeleteWell, over here we call that white sauce or roux... and adding cheese and mustard to it makes a cheese sauce. No chook for me - but veges of any kind will do - or pasta - and a nice hunk of toast on the side. YUM!!! Hugs and whiskeries, YAM-aunty xxx
That looks tasty! What an adorable picture of the cats!

ReplyDeleteIt looks like someone is unhappy with the service.
ReplyDeleteMom's mom used to make this but with tuna and cream of mushroom soup. Mom had forgotten all about that and now wants some. She really likes the idea of doing it with chicken. Easy, peasy meal. XOCK, angel Lily Olivia, angel Mauricio, Misty May, Giulietta, angel Fiona, Astrid, Lisbeth, Calista Jo, Cooper Murphy, Sawyer & Kizmet
