We Made Creamed Chicken on Toast
This is a really quick and easy comfort food dinner. Mom usually makes it with leftover rotisserie chicken and turkey (at Christmas and Thanksgiving). It is a basic cream sauce with Chicken added. Mom likes it with peas, us cats (and Cinnamon) like without.
Make enough cream sauce for the amount of chicken or turkey you have.
A rotisserie chicken works great. The recipe below is for a medium
cream sauce, like thick cream. Add more flour if you want it thicker.
For each cup of sauce…
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup milk
Melt butter in saucepan over low heat, if you have time and like onions, you can fry some diced onions in the butter. When bubbly (and if you added onions, cook until they are translucent). Then blend in flour, salt and
pepper.
Cook over low heat, stirring until mixture is smooth and bubbly.
Remove from heat, stir in milk. Then return to heat and heat to
boiling, stirring constantly.
If you want peas, add a quarter cup of frozen peas to a little bit of
water and zap for 1 minute (or until steaming. Boil for 1 minute.
Turn off heat, add the drained peas and the chicken, stir, cover and let the boiling sauce heat the chicken.
Spoon over toast and (if desired) sprinkle with paprika, lemon pepper or salt and pepper.
